These Banana Bread Muffins are the perfect blend of moist, banana-packed goodness in muffin form. With a soft texture and natural sweetness, they’re perfect for breakfast, a snack, or dessert. These muffins are quick to make and a great way to use up ripe bananas!

- 1 ½ cups all-purpose flour
- 1 tsp baking soda
- ½ tsp baking powder
- ¼ tsp salt
- 3 ripe bananas, mashed
- ¾ cup sugar
- 1 large egg
- 1/3 cup unsalted butter, melted
- 1 tsp vanilla extract
- ¼ cup milk
- ½ tsp cinnamon (optional)
Instructions
- Preheat the oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners or grease the cups.
- In a large bowl, whisk together the flour, baking soda, baking powder, salt, and cinnamon (if using).
- In another bowl, mix the mashed bananas, sugar, egg, melted butter, vanilla extract, and milk until smooth.
- Add the wet ingredients to the dry ingredients and stir until just combined. Be careful not to overmix.
- Spoon the batter evenly into the muffin tin, filling each cup about 2/3 full.
- Bake for 18-22 minutes, or until a toothpick inserted into the center comes out clean.
- Let the muffins cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.
Notes
- Add chocolate chips, walnuts, or pecans for extra flavor and crunch.
- For extra moisture, you can substitute half of the butter with sour cream or yogurt.
