Description

These Banana Streusel Muffins are a perfect combination of soft, moist banana flavor and a crunchy, sweet streusel topping. They make a great breakfast treat or afternoon snack, offering a delightful texture contrast with every bite.

For the Muffins:

  • 1 ½ cups all-purpose flour
  • ½ tsp baking soda
  • 1 ½ tsp baking powder
  • ¼ tsp salt
  • 2 ripe bananas, mashed
  • ¾ cup sugar
  • 1 large egg
  • 1/3 cup unsalted butter, melted
  • 1 tsp vanilla extract
  • ½ cup buttermilk

For the Streusel Topping:

  1. ¼ cup all-purpose flour
  2. ¼ cup packed brown sugar
  3. 2 tbsp unsalted butter, cold and cubed
  4. ¼ tsp ground cinnamon

Instructions

  • Preheat the oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners or grease the cups.
  • In a large bowl, whisk together the flour, baking soda, baking powder, and salt.
  • In another bowl, mix the mashed bananas, sugar, egg, melted butter, vanilla extract, and buttermilk until combined.
  • Add the wet ingredients to the dry ingredients and stir until just combined.
  • For the streusel topping, combine the flour, brown sugar, cinnamon, and cold butter in a small bowl. Use a fork or your fingers to work the butter into the dry ingredients until crumbly.
  • Spoon the muffin batter into the prepared muffin tin, filling each cup about 2/3 full. Sprinkle the streusel topping evenly over each muffin.
  • Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  • Let the muffins cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.

Notes

  • Add chocolate chips or chopped nuts to the batter for extra flavor and texture.
  • If you don’t have buttermilk, substitute with regular milk or make your own by adding a teaspoon of vinegar to a half-cup of milk.
