Description

This Easy and Delicious Beef Stew is the perfect comfort food for any occasion. Tender chunks of beef, hearty vegetables, and a rich, flavorful broth come together in a satisfying one-pot meal that’s simple to make and full of flavor.

 


Ingredients

  1. 1 lb beef stew meat, cubed
  2. 3 carrots, peeled and sliced
  3. 3 potatoes, peeled and diced
  4. 1 onion, chopped
  5. 2 cloves garlic, minced
  6. 4 cups beef broth
  7. 1 can (14.5 oz) diced tomatoes
  8. 1 tbsp Worcestershire sauce
  9. 1 tsp dried thyme
  10. 1 tsp salt
  11. 1/2 tsp pepper
  12. 2 tbsp flour (optional, for thickening)

Instructions

  • In a large pot, brown the beef stew meat over medium heat, then remove and set aside.
  • In the same pot, sauté the onions and garlic until fragrant.
  • Add the beef back into the pot along with the carrots, potatoes, beef broth, diced tomatoes, Worcestershire sauce, thyme, salt, and pepper.
  • Bring the stew to a boil, then reduce heat to low. Simmer for 1.5 to 2 hours, or until beef and vegetables are tender.
  • If desired, whisk flour into a bit of water and stir into the stew to thicken. Simmer for an additional 10 minutes.
  • Serve hot and enjoy!

Notes

  • For a richer flavor, use bone-in beef chunks or add a splash of red wine during cooking.
  • You can freeze leftovers for up to 3 months.
