Description

This beef taco casserole combines all your favorite taco flavors into one hearty and cheesy dish. Perfect for weeknight dinners or casual gatherings, it’s a crowd-pleaser that’s as easy as it is delicious!


Ingredients

  • 1 lb ground beef
  • 1 small onion, diced
  • 1 packet taco seasoning
  • 1 (10 oz) can diced tomatoes with green chilies
  • 1 (15 oz) can black beans, rinsed and drained
  • 1 1/2 cups cooked rice (optional)
  • 1 cup frozen corn
  • 2 cups shredded cheddar or Mexican blend cheese
  • 1 cup tortilla chips, crushed
  • 1/4 cup sliced black olives (optional)

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) and grease a 9×13-inch baking dish.
  2. Cook Beef Mixture: In a large skillet, cook ground beef and onion over medium heat until the beef is browned. Drain any excess fat. Add taco seasoning, diced tomatoes, black beans, and corn. Stir to combine and let simmer for 5 minutes.
  3. Assemble Casserole: Spread the cooked rice (if using) in the bottom of the prepared baking dish. Layer the beef mixture on top. Sprinkle shredded cheese evenly over the top, followed by crushed tortilla chips.
  4. Bake: Bake for 20-25 minutes, or until the cheese is melted and bubbly.
  5. Serve: Let the casserole cool slightly before serving. Garnish with black olives, sour cream, chopped cilantro, or diced avocado if desired.

Notes

  • You can substitute ground turkey or chicken for the beef for a lighter option.
  • For added heat, stir in a diced jalapeño or use spicy taco seasoning.
