Description

This Easy Beef Taco Soup is a flavorful, hearty dish packed with seasoned beef, beans, and vegetables, all simmered in a rich broth. It’s a quick and satisfying meal that’s perfect for busy days or cozy nights!

 


Ingredients

  1. 1 lb ground beef
  2. 1 onion, chopped
  3. 2 cloves garlic, minced
  4. 1 can (15 oz) black beans, drained and rinsed
  5. 1 can (15 oz) kidney beans, drained and rinsed
  6. 1 can (14.5 oz) diced tomatoes
  7. 1 packet taco seasoning
  8. 4 cups beef broth
  9. 1 cup corn kernels (fresh or frozen)
  10. 1/2 cup salsa
  11. Salt and pepper to taste
  12. Optional toppings: sour cream, shredded cheese, green onions, tortilla chips

Instructions

  • Brown the ground beef in a large pot over medium heat. Drain excess fat, then set aside.
  • In the same pot, sauté the onions and garlic until fragrant.
  • Add the browned beef back into the pot, then stir in taco seasoning, beans, tomatoes, beef broth, corn, and salsa.
  • Bring to a boil, then reduce heat to low and simmer for 20-30 minutes, allowing flavors to meld together.
  • Season with salt and pepper to taste.
  • Serve hot, topped with your favorite garnishes like sour cream, cheese, and tortilla chips.

Notes

  • This soup can easily be made ahead and stored in the fridge for up to 3 days.
  • For extra heat, add chopped jalapeños or a dash of hot sauce.
