- 1 lb ground beef
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (14.5 oz) diced tomatoes
- 1 packet taco seasoning
- 4 cups beef broth
- 1 cup corn kernels (fresh or frozen)
- 1/2 cup salsa
- Salt and pepper to taste
- Optional toppings: sour cream, shredded cheese, green onions, tortilla chips
Instructions
- Brown the ground beef in a large pot over medium heat. Drain excess fat, then set aside.
- In the same pot, sauté the onions and garlic until fragrant.
- Add the browned beef back into the pot, then stir in taco seasoning, beans, tomatoes, beef broth, corn, and salsa.
- Bring to a boil, then reduce heat to low and simmer for 20-30 minutes, allowing flavors to meld together.
- Season with salt and pepper to taste.
- Serve hot, topped with your favorite garnishes like sour cream, cheese, and tortilla chips.
Notes
- This soup can easily be made ahead and stored in the fridge for up to 3 days.
- For extra heat, add chopped jalapeños or a dash of hot sauce.
