- For the Crust:
- 1 cup graham cracker crumbs
- 3 tbsp melted butter
- 2 tbsp sugar
- For the Cheesecake Filling:
- 16 oz cream cheese (softened)
- 1/2 cup sugar
- 2 large eggs
- 1 tsp vanilla extract
- For the Berry Swirl:
- 1/2 cup mixed berry puree (strawberries, raspberries, or blueberries)
- 2 tbsp sugar
Instructions
- Preheat Oven: Heat to 325°F (165°C) and line a mini muffin tin with liners.
- Prepare the Crust: Mix graham cracker crumbs, melted butter, and sugar. Press a small amount into the bottom of each liner. Bake for 5 minutes, then cool slightly.
- Make the Filling: Beat cream cheese, sugar, eggs, and vanilla until smooth. Fill each liner 3/4 full with the cheesecake mixture.
- Add Berry Swirl: Spoon small dots of berry puree onto the filling. Swirl gently with a toothpick.
- Bake: Bake for 12-15 minutes or until set. Let cool, then refrigerate for 2 hours before serving.
Notes
- Use fresh or frozen berries for the puree. Strain for a smooth texture.
- Store bites in the fridge for up to 4 days. Perfect for make-ahead desserts!
