Mini cheesecake bites with a luscious berry swirl, perfect for a sweet treat or party dessert! 🍓🫐


Ingredients

  • For the Crust:
    • 1 cup graham cracker crumbs
    • 3 tbsp melted butter
    • 2 tbsp sugar
  • For the Cheesecake Filling:
    • 16 oz cream cheese (softened)
    • 1/2 cup sugar
    • 2 large eggs
    • 1 tsp vanilla extract
  • For the Berry Swirl:
    • 1/2 cup mixed berry puree (strawberries, raspberries, or blueberries)
    • 2 tbsp sugar

Instructions

  1. Preheat Oven: Heat to 325°F (165°C) and line a mini muffin tin with liners.
  2. Prepare the Crust: Mix graham cracker crumbs, melted butter, and sugar. Press a small amount into the bottom of each liner. Bake for 5 minutes, then cool slightly.
  3. Make the Filling: Beat cream cheese, sugar, eggs, and vanilla until smooth. Fill each liner 3/4 full with the cheesecake mixture.
  4. Add Berry Swirl: Spoon small dots of berry puree onto the filling. Swirl gently with a toothpick.
  5. Bake: Bake for 12-15 minutes or until set. Let cool, then refrigerate for 2 hours before serving.

Notes

  • Use fresh or frozen berries for the puree. Strain for a smooth texture.
  • Store bites in the fridge for up to 4 days. Perfect for make-ahead desserts!
