  1. 1 ½ cups all-purpose flour
  2. 1 ½ tsp baking powder
  3. ½ tsp baking soda
  4. ¼ tsp salt
  5. 1 cup sugar
  6. ½ cup unsalted butter, softened
  7. 2 large eggs
  8. 1 tsp vanilla extract
  9. ½ cup buttermilk
  10. 1 cup fresh strawberries, pureed
  11. 2 cups powdered sugar (for frosting)
  12. ½ cup unsalted butter, softened (for frosting)
  13. 1 tsp vanilla extract (for frosting)
  14. 23 tbsp milk (for frosting)

Instructions

  • Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  • In a bowl, whisk together the flour, baking powder, baking soda, and salt.
  • In another bowl, cream together the sugar and butter until light and fluffy. Add the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract.
  • Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk, until fully combined.
  • Stir in the pureed strawberries until well incorporated.
  • Pour the batter evenly into the prepared cake pans and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  • Allow the cakes to cool completely before frosting.
  • For the frosting, beat together the powdered sugar, butter, and vanilla extract until smooth and creamy. Add milk, a tablespoon at a time, until the desired frosting consistency is reached.
  • Frost the cooled cakes and serve!

Notes

  • For an extra burst of strawberry flavor, add chopped fresh strawberries into the frosting or the cake batter.
  • If you prefer a more vibrant pink color in the cake, feel free to add a few drops of food coloring.
