- Cook Pasta: Cook the pasta according to package instructions until al dente. Drain and set aside, reserving 1/2 cup of pasta water.
- Prepare Bruschetta Topping: In a medium bowl, combine the cherry tomatoes, chopped fresh basil, garlic, and olive oil. Season with salt and pepper. Stir and set aside to marinate for 10-15 minutes.
- Cook Chicken: While the pasta is cooking, season the chicken breasts with salt, pepper, and a little olive oil. Grill or cook them in a skillet over medium heat until fully cooked, about 6-7 minutes per side. Slice the chicken into thin strips.
- Make the Sauce: In the same skillet used for the chicken, add balsamic vinegar and bring it to a simmer, allowing it to reduce by half (about 2-3 minutes). If needed, add a splash of reserved pasta water to make a light sauce.
- Combine: Toss the cooked pasta with the bruschetta mixture, adding a little of the pasta water if needed to create a slightly saucy texture. Add the sliced chicken on top and drizzle with the balsamic reduction.
- Serve: Top with shredded mozzarella cheese if using, and garnish with extra fresh basil. Serve warm.
