Description

Bruschetta Chicken Pasta combines the savory flavors of grilled chicken, juicy tomatoes, and fresh basil with al dente pasta and a zesty balsamic glaze. This light yet flavorful dish is perfect for a quick weeknight dinner or a special meal.


Ingredients

  • 2 chicken breasts, grilled and sliced
  • 12 oz pasta (penne, spaghetti, or your choice)
  • 2 cups cherry tomatoes, halved
  • 1/4 cup fresh basil, chopped
  • 2 tbsp olive oil
  • 2 tbsp balsamic vinegar
  • 1 clove garlic, minced
  • 1/2 cup mozzarella cheese, shredded (optional)
  • Salt and pepper to taste
  • Fresh basil leaves (for garnish)

Instructions

  1. Cook Pasta: Cook the pasta according to package instructions until al dente. Drain and set aside, reserving 1/2 cup of pasta water.
  2. Prepare Bruschetta Topping: In a medium bowl, combine the cherry tomatoes, chopped fresh basil, garlic, and olive oil. Season with salt and pepper. Stir and set aside to marinate for 10-15 minutes.
  3. Cook Chicken: While the pasta is cooking, season the chicken breasts with salt, pepper, and a little olive oil. Grill or cook them in a skillet over medium heat until fully cooked, about 6-7 minutes per side. Slice the chicken into thin strips.
  4. Make the Sauce: In the same skillet used for the chicken, add balsamic vinegar and bring it to a simmer, allowing it to reduce by half (about 2-3 minutes). If needed, add a splash of reserved pasta water to make a light sauce.
  5. Combine: Toss the cooked pasta with the bruschetta mixture, adding a little of the pasta water if needed to create a slightly saucy texture. Add the sliced chicken on top and drizzle with the balsamic reduction.
  6. Serve: Top with shredded mozzarella cheese if using, and garnish with extra fresh basil. Serve warm.

Notes

  • For a twist, add a drizzle of olive oil and grated Parmesan cheese before serving.
  • You can use grilled chicken leftovers for a quicker prep time.
