Instructions
- Prepare the crust:
- Preheat the oven to 325°F (165°C). In a bowl, mix the graham cracker crumbs, sugar, and melted butter until well combined.
- Press the mixture into the bottom of a greased 9-inch springform pan. Bake for 10 minutes, then set aside to cool.
- Make the cheesecake filling:
- Beat the softened cream cheese and sugar together in a large bowl until smooth and creamy.
- Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract and sour cream until fully combined.
- Pour the cheesecake filling over the cooled crust. Smooth the top with a spatula.
- Bake the cheesecake:
- Bake the cheesecake at 325°F (165°C) for 50-60 minutes, or until the center is set and slightly jiggles. Turn off the oven, leave the door ajar, and let the cheesecake cool for 1 hour.
- After cooling, refrigerate the cheesecake for at least 4 hours or overnight.
- Prepare the caramel apple topping:
- In a skillet, melt the butter over medium heat. Add the chopped apples, brown sugar, cinnamon, and nutmeg. Cook for 5-7 minutes, stirring occasionally, until the apples are tender and caramelized.
