Description

Cheeseburger Soup is a hearty, comforting dish that combines all the delicious flavors of a cheeseburger in soup form. With ground beef, creamy cheese, and veggies, this one-pot meal is both filling and perfect for cozy nights.

 


Ingredients

  1. 1 lb ground beef
  2. 1 small onion, diced
  3. 2 cloves garlic, minced
  4. 3 medium potatoes, peeled and diced
  5. 2 cups beef broth
  6. 1 cup milk
  7. 1 cup shredded cheddar cheese
  8. 1 cup shredded mozzarella cheese
  9. 1 tbsp ketchup
  10. 1 tbsp mustard
  11. ½ tsp paprika
  12. Salt and pepper, to taste
  13. 2 tbsp olive oil (for cooking)
  14. Optional garnishes: chopped pickles, crispy bacon, fresh parsley

Instructions

  • Heat olive oil in a large pot over medium heat. Add the ground beef, cooking and breaking it up as it browns, for about 5-7 minutes. Drain excess fat.
  • Add the diced onion and minced garlic to the pot. Sauté for 2-3 minutes until softened.
  • Stir in the diced potatoes, beef broth, milk, ketchup, mustard, paprika, salt, and pepper. Bring to a boil.
  • Reduce the heat and let it simmer for 15-20 minutes, or until the potatoes are tender.
  • Lower the heat and stir in the shredded cheddar and mozzarella cheese until melted and smooth.
  • Taste and adjust the seasoning with salt and pepper as needed.
  • Serve hot, topped with optional garnishes like pickles, crispy bacon, or parsley.

Notes

  • For a richer soup, you can add a splash of heavy cream instead of milk.
  • For extra flavor, top with crispy bacon or a dollop of sour cream.
