Cheeseburger Soup is a hearty, comforting dish that combines all the delicious flavors of a cheeseburger in soup form. With ground beef, creamy cheese, and veggies, this one-pot meal is both filling and perfect for cozy nights.

- 1 lb ground beef
- 1 small onion, diced
- 2 cloves garlic, minced
- 3 medium potatoes, peeled and diced
- 2 cups beef broth
- 1 cup milk
- 1 cup shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- 1 tbsp ketchup
- 1 tbsp mustard
- ½ tsp paprika
- Salt and pepper, to taste
- 2 tbsp olive oil (for cooking)
- Optional garnishes: chopped pickles, crispy bacon, fresh parsley
Instructions
- Heat olive oil in a large pot over medium heat. Add the ground beef, cooking and breaking it up as it browns, for about 5-7 minutes. Drain excess fat.
- Add the diced onion and minced garlic to the pot. Sauté for 2-3 minutes until softened.
- Stir in the diced potatoes, beef broth, milk, ketchup, mustard, paprika, salt, and pepper. Bring to a boil.
- Reduce the heat and let it simmer for 15-20 minutes, or until the potatoes are tender.
- Lower the heat and stir in the shredded cheddar and mozzarella cheese until melted and smooth.
- Taste and adjust the seasoning with salt and pepper as needed.
- Serve hot, topped with optional garnishes like pickles, crispy bacon, or parsley.
Notes
- For a richer soup, you can add a splash of heavy cream instead of milk.
- For extra flavor, top with crispy bacon or a dollop of sour cream.
