- 4 large potatoes, peeled and cubed
- 2 cups shredded cheddar cheese
- 1/2 cup sour cream
- 1/4 cup milk
- 2 tbsp butter
- Salt and pepper to taste
- 1/4 cup green onions, chopped (optional)
Instructions
- Preheat the oven to 375°F (190°C).
- Boil the cubed potatoes in salted water until tender (about 10-12 minutes).
- Drain the potatoes and mash them with butter, sour cream, milk, salt, and pepper.
- Stir in 1 1/2 cups of cheese until melted and smooth.
- Transfer the mashed potatoes into a greased baking dish, top with remaining cheese, and bake for 20-25 minutes or until golden and bubbly.
- Garnish with chopped green onions, if desired.
