- 2 cups cooked chicken, shredded or diced
- 1 cup long-grain white rice (uncooked)
- 1 can (10.5 oz) cream of chicken soup
- 1 can (10.5 oz) chicken broth
- 1 cup sour cream
- 1 medium onion, chopped
- 1 cup shredded cheddar cheese
- 2 tbsp unsalted butter
- 1 tsp garlic powder
- 1 tsp onion powder
- ½ tsp salt
- ½ tsp black pepper
- 1 cup frozen peas (optional)
Instructions
- Preheat the oven to 350°F (175°C). Grease a 9×13-inch baking dish with cooking spray or butter.
- In a large bowl, mix together the cream of chicken soup, chicken broth, sour cream, garlic powder, onion powder, salt, and pepper.
- Add the uncooked rice, cooked chicken, chopped onion, and frozen peas (if using) into the soup mixture. Stir until everything is well combined.
- Pour the mixture into the prepared baking dish and spread it evenly.
- Cover the dish with aluminum foil and bake for 45 minutes.
- After 45 minutes, remove the foil, stir the casserole, and sprinkle the shredded cheddar cheese over the top.
- Return the casserole to the oven and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly, and the rice is tender.
- Let the casserole cool for 5 minutes before serving.
Notes
- You can use leftover chicken or rotisserie chicken for a quicker prep time.
