Description

This comforting Chicken and Rice Casserole is a one-pan meal that combines tender chicken, savory rice, and a creamy sauce. It’s an easy, wholesome dish that’s perfect for busy weeknights or a family dinner. With simple ingredients and loads of flavor, this casserole is sure to become a favorite.

  1. 2 cups cooked chicken, shredded or diced
  2. 1 cup long-grain white rice (uncooked)
  3. 1 can (10.5 oz) cream of chicken soup
  4. 1 can (10.5 oz) chicken broth
  5. 1 cup sour cream
  6. 1 medium onion, chopped
  7. 1 cup shredded cheddar cheese
  8. 2 tbsp unsalted butter
  9. 1 tsp garlic powder
  10. 1 tsp onion powder
  11. ½ tsp salt
  12. ½ tsp black pepper
  13. 1 cup frozen peas (optional)

Instructions

  • Preheat the oven to 350°F (175°C). Grease a 9×13-inch baking dish with cooking spray or butter.
  • In a large bowl, mix together the cream of chicken soup, chicken broth, sour cream, garlic powder, onion powder, salt, and pepper.
  • Add the uncooked rice, cooked chicken, chopped onion, and frozen peas (if using) into the soup mixture. Stir until everything is well combined.
  • Pour the mixture into the prepared baking dish and spread it evenly.
  • Cover the dish with aluminum foil and bake for 45 minutes.
  • After 45 minutes, remove the foil, stir the casserole, and sprinkle the shredded cheddar cheese over the top.
  • Return the casserole to the oven and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly, and the rice is tender.
  • Let the casserole cool for 5 minutes before serving.

Notes

  • You can use leftover chicken or rotisserie chicken for a quicker prep time.
  • Feel free to add other vegetables like carrots, mushrooms, or broccoli to customize the casserole to your liking.
  • For extra crunch, top with breadcrumbs before baking.
