Ingredients
Scale
- 1 lb ground beef (or turkey for a lighter version)
- 1 medium onion, chopped
- 1 bell pepper, chopped
- 3 cloves garlic, minced
- 1 (14.5 oz) can diced tomatoes
- 1 (15 oz) can kidney beans, drained and rinsed
- 1 (15 oz) can black beans, drained and rinsed
- 1 (6 oz) can tomato paste
- 1 (4 oz) can diced green chilies (optional for a bit of heat)
- 1 cup beef or vegetable broth
- 2 tbsp chili powder
- 1 tsp ground cumin
- 1 tsp smoked paprika (optional)
- ½ tsp salt (adjust to taste)
- ½ tsp black pepper
- 1/4 tsp red pepper flakes (optional, for extra heat)
- 1 tbsp olive oil
Instructions
- Cook the Beef: In a large pot or Dutch oven, heat olive oil over medium-high heat. Add ground beef and cook until browned, breaking it apart with a spoon as it cooks. Drain excess fat if necessary.
- Add Veggies: Add chopped onion, bell pepper, and garlic to the pot. Cook for 5-7 minutes, or until the vegetables soften and the onions become translucent.
- Add Spices: Stir in chili powder, cumin, paprika, salt, pepper, and red pepper flakes (if using). Cook for 1-2 minutes until the spices become fragrant.
- Add Tomatoes and Beans: Add diced tomatoes (with their juice), tomato paste, green chilies (if using), kidney beans, black beans, and beef broth. Stir to combine everything.
- Simmer: Bring the chili to a simmer, then reduce heat to low. Cover the pot and let it cook for 30-45 minutes, stirring occasionally. The flavors will meld and the chili will thicken. If the chili gets too thick, you can add a bit more broth or water to reach your desired consistency.
- Taste and Adjust: Taste the chili and adjust seasoning if necessary. You can add more chili powder, salt, or pepper to suit your preference.
- Serve: Serve hot with your favorite toppings like shredded cheese, sour cream, chopped green onions, or tortilla chips.
Notes
- You can use any combination of beans you like—pinto beans, black beans, or even add corn for extra texture.
- For a spicier chili, add more chili powder, jalapeños, or hot sauce.
- This chili tastes even better the next day as the flavors continue to develop.
