Description

This hearty and flavorful chili is the perfect comfort food for chilly nights. With a blend of ground beef, beans, and a rich tomato-based sauce, this chili is easy to make, satisfying, and customizable to your taste!

  1. 1 lb ground beef (or turkey for a lighter version)
  2. 1 medium onion, chopped
  3. 1 bell pepper, chopped
  4. 3 cloves garlic, minced
  5. 1 (14.5 oz) can diced tomatoes
  6. 1 (15 oz) can kidney beans, drained and rinsed
  7. 1 (15 oz) can black beans, drained and rinsed
  8. 1 (6 oz) can tomato paste
  9. 1 (4 oz) can diced green chilies (optional for a bit of heat)
  10. 1 cup beef or vegetable broth
  11. 2 tbsp chili powder
  12. 1 tsp ground cumin
  13. 1 tsp smoked paprika (optional)
  14. ½ tsp salt (adjust to taste)
  15. ½ tsp black pepper
  16. 1/4 tsp red pepper flakes (optional, for extra heat)
  17. 1 tbsp olive oil

Instructions

  • Cook the Beef: In a large pot or Dutch oven, heat olive oil over medium-high heat. Add ground beef and cook until browned, breaking it apart with a spoon as it cooks. Drain excess fat if necessary.
  • Add Veggies: Add chopped onion, bell pepper, and garlic to the pot. Cook for 5-7 minutes, or until the vegetables soften and the onions become translucent.
  • Add Spices: Stir in chili powder, cumin, paprika, salt, pepper, and red pepper flakes (if using). Cook for 1-2 minutes until the spices become fragrant.
  • Add Tomatoes and Beans: Add diced tomatoes (with their juice), tomato paste, green chilies (if using), kidney beans, black beans, and beef broth. Stir to combine everything.
  • Simmer: Bring the chili to a simmer, then reduce heat to low. Cover the pot and let it cook for 30-45 minutes, stirring occasionally. The flavors will meld and the chili will thicken. If the chili gets too thick, you can add a bit more broth or water to reach your desired consistency.
  • Taste and Adjust: Taste the chili and adjust seasoning if necessary. You can add more chili powder, salt, or pepper to suit your preference.
  • Serve: Serve hot with your favorite toppings like shredded cheese, sour cream, chopped green onions, or tortilla chips.

Notes

  • You can use any combination of beans you like—pinto beans, black beans, or even add corn for extra texture.
  • For a spicier chili, add more chili powder, jalapeños, or hot sauce.
