- Preheat the Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Prepare the Dough: In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
- Make the Cookie Dough: In a large bowl, beat the softened butter and brown sugar together until light and fluffy, about 2-3 minutes. Add the egg and vanilla extract, mixing until fully combined.
- Add Strawberry Powder and Flour: Gradually add the crushed freeze-dried strawberries to the butter mixture and stir until incorporated. Slowly add the dry ingredients to the wet ingredients, mixing until just combined. Fold in the white chocolate chips.
- Shape the Cookies: Scoop tablespoon-sized portions of dough and roll them into balls. Place the cookie dough balls on the prepared baking sheet, spacing them about 2 inches apart.
