These Chocolate Covered Strawberry Cookies are a delicious and unique treat, combining the rich taste of chocolate with the sweet freshness of strawberries. Perfect for any occasion, these cookies are soft, chewy, and decorated with a delightful chocolate drizzle.

Ingredients:

For the Cookies:

  • 1 ½ cups all-purpose flour
  • ½ tsp baking soda
  • ¼ tsp salt
  • ½ cup unsalted butter, softened
  • ¾ cup brown sugar, packed
  • 1 large egg
  • 1 tsp vanilla extract
  • ½ cup freeze-dried strawberries, crushed into powder
  • 1 cup white chocolate chips (or milk chocolate chips)

For the Chocolate Drizzle:

  1. ½ cup semi-sweet chocolate chips
  2. 2 tbsp heavy cream

Instructions

  • Preheat the Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • Prepare the Dough: In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
  • Make the Cookie Dough: In a large bowl, beat the softened butter and brown sugar together until light and fluffy, about 2-3 minutes. Add the egg and vanilla extract, mixing until fully combined.
  • Add Strawberry Powder and Flour: Gradually add the crushed freeze-dried strawberries to the butter mixture and stir until incorporated. Slowly add the dry ingredients to the wet ingredients, mixing until just combined. Fold in the white chocolate chips.
  • Shape the Cookies: Scoop tablespoon-sized portions of dough and roll them into balls. Place the cookie dough balls on the prepared baking sheet, spacing them about 2 inches apart.
  • Bake the Cookies: Bake for 10-12 minutes, or until the edges of the cookies are golden and the centers look set. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
  • Make the Chocolate Drizzle: While the cookies are cooling, melt the semi-sweet chocolate chips and heavy cream together in a microwave-safe bowl in 20-second intervals, stirring in between, until smooth and glossy.
  • Drizzle the Chocolate: Once the cookies are completely cooled, drizzle the melted chocolate over the top of each cookie using a spoon or a piping bag.
  • Allow to Set: Let the chocolate set for 20-30 minutes at room temperature before serving.

Notes

  • For an extra touch of flavor, you can add finely chopped fresh strawberries to the dough, but be mindful not to add too much moisture.
  • The freeze-dried strawberries give a concentrated strawberry flavor without adding extra liquid to the cookie dough.
