- 3–4 lb beef brisket
- 2 large onions, sliced
- 3 cloves garlic, minced
- 1/3 cup balsamic vinegar
- 1 cup beef broth
- 2 tbsp olive oil
- 2 tbsp brown sugar
- 1 tsp dried thyme
- Salt and pepper, to taste
Instructions
- Sear the Brisket: Heat olive oil in a large skillet. Season brisket with salt and pepper, then sear on both sides until browned.
- Prepare the Onions: Add onions, garlic, and brown sugar to the skillet. Cook until onions soften and caramelize slightly.
- Slow Cook: Place brisket in the slow cooker. Pour balsamic vinegar, beef broth, and thyme over it. Add caramelized onions.
- Cook: Cover and cook on low for 8 hours (or high for 4 hours) until the brisket is tender.
- Make the Gravy: Remove brisket and let it rest. Blend the remaining sauce into a smooth gravy or serve it as-is with onions.
