Ingredients

  • 34 lb beef brisket
  • 2 large onions, sliced
  • 3 cloves garlic, minced
  • 1/3 cup balsamic vinegar
  • 1 cup beef broth
  • 2 tbsp olive oil
  • 2 tbsp brown sugar
  • 1 tsp dried thyme
  • Salt and pepper, to taste

Instructions

  1. Sear the Brisket: Heat olive oil in a large skillet. Season brisket with salt and pepper, then sear on both sides until browned.
  2. Prepare the Onions: Add onions, garlic, and brown sugar to the skillet. Cook until onions soften and caramelize slightly.
  3. Slow Cook: Place brisket in the slow cooker. Pour balsamic vinegar, beef broth, and thyme over it. Add caramelized onions.
  4. Cook: Cover and cook on low for 8 hours (or high for 4 hours) until the brisket is tender.
  5. Make the Gravy: Remove brisket and let it rest. Blend the remaining sauce into a smooth gravy or serve it as-is with onions.

  • Slice the brisket against the grain for the most tender results.
  • Serve with mashed potatoes or crusty bread to soak up the gravy.
