Description

Cottage Cheese Pasta is a creamy, light, and delicious dish that’s perfect for a quick meal. The cottage cheese provides a rich, velvety sauce, creating a comforting and nutritious alternative to traditional creamy pasta sauces.

 


Ingredients

  1. 8 oz (225g) pasta (penne, fusilli, or spaghetti)
  2. 1 cup cottage cheese (full-fat or low-fat)
  3. 1/4 cup grated Parmesan cheese
  4. 1 tbsp olive oil
  5. 2 garlic cloves, minced
  6. 1/2 cup milk (or more for desired creaminess)
  7. Salt and pepper to taste
  8. Fresh parsley for garnish (optional)

Instructions

  • Cook the pasta according to package instructions, then drain and set aside.
  • In a large pan, heat olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1-2 minutes.
  • In a bowl, blend the cottage cheese and milk until smooth.
  • Add the cottage cheese mixture to the pan with garlic and simmer for 3-4 minutes. Stir occasionally and add more milk if needed to reach your desired consistency.
  • Stir in the Parmesan cheese, and season with salt and pepper.
  • Toss the cooked pasta into the sauce, making sure it’s evenly coated.
  • Serve hot, garnished with fresh parsley or additional Parmesan, if desired.

Notes

  • For added flavor, you can mix in sautéed spinach, mushrooms, or roasted vegetables.
  • This dish can be made with low-fat cottage cheese for a lighter version.
