- 8 oz (225g) pasta (penne, fusilli, or spaghetti)
- 1 cup cottage cheese (full-fat or low-fat)
- 1/4 cup grated Parmesan cheese
- 1 tbsp olive oil
- 2 garlic cloves, minced
- 1/2 cup milk (or more for desired creaminess)
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Cook the pasta according to package instructions, then drain and set aside.
- In a large pan, heat olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1-2 minutes.
- In a bowl, blend the cottage cheese and milk until smooth.
- Add the cottage cheese mixture to the pan with garlic and simmer for 3-4 minutes. Stir occasionally and add more milk if needed to reach your desired consistency.
- Stir in the Parmesan cheese, and season with salt and pepper.
- Toss the cooked pasta into the sauce, making sure it’s evenly coated.
- Serve hot, garnished with fresh parsley or additional Parmesan, if desired.
Notes
- For added flavor, you can mix in sautéed spinach, mushrooms, or roasted vegetables.
- This dish can be made with low-fat cottage cheese for a lighter version.
