Description
A deliciously tangy and savory roast beef, glazed with a cranberry balsamic sauce that adds a sweet and tart flavor — the perfect dish for holiday gatherings or a comforting dinner!
Ingredients
Scale
- 3 lb beef roast (ribeye or sirloin)
- 1 cup fresh cranberries
- 1/4 cup balsamic vinegar
- 1/2 cup beef broth
- 2 tbsp brown sugar
- 2 tbsp olive oil
- 1 tbsp fresh thyme, chopped
- 2 cloves garlic, minced
- Salt and pepper to taste
Instructions
- Prepare the Beef: Preheat oven to 350°F (175°C). Season the beef roast generously with salt, pepper, and thyme. Heat olive oil in a large pan over medium-high heat and sear the roast on all sides until browned.
- Make the Sauce: In a saucepan, combine cranberries, balsamic vinegar, beef broth, brown sugar, and garlic. Bring to a simmer, cooking for 10-15 minutes until the cranberries burst and the sauce thickens.
- Roast the Beef: Place the seared roast in a baking dish. Pour the cranberry balsamic sauce over the roast, reserving some sauce for serving. Roast for 45-60 minutes, or until the roast reaches your desired level of doneness.
- Rest and Slice: Remove the roast from the oven and let it rest for 10 minutes before slicing. Serve with the reserved cranberry balsamic sauce.
Notes
- Pair with mashed potatoes or roasted vegetables for a complete meal.
- For a sweeter sauce, add extra brown sugar or honey.
