Ingredients

  • 3 lb beef roast (ribeye or sirloin)
  • 1 cup fresh cranberries
  • 1/4 cup balsamic vinegar
  • 1/2 cup beef broth
  • 2 tbsp brown sugar
  • 2 tbsp olive oil
  • 1 tbsp fresh thyme, chopped
  • 2 cloves garlic, minced
  • Salt and pepper to taste

Instructions

  1. Prepare the Beef: Preheat oven to 350°F (175°C). Season the beef roast generously with salt, pepper, and thyme. Heat olive oil in a large pan over medium-high heat and sear the roast on all sides until browned.
  2. Make the Sauce: In a saucepan, combine cranberries, balsamic vinegar, beef broth, brown sugar, and garlic. Bring to a simmer, cooking for 10-15 minutes until the cranberries burst and the sauce thickens.
  3. Roast the Beef: Place the seared roast in a baking dish. Pour the cranberry balsamic sauce over the roast, reserving some sauce for serving. Roast for 45-60 minutes, or until the roast reaches your desired level of doneness.
  4. Rest and Slice: Remove the roast from the oven and let it rest for 10 minutes before slicing. Serve with the reserved cranberry balsamic sauce.
