  2. 1 red bell pepper, sliced
  3. 1 yellow bell pepper, sliced
  4. 1 onion, sliced
  5. 1 can (14 oz) diced tomatoes
  6. 1 can (4 oz) diced green chilies
  7. 1 cup chicken broth
  8. 1 packet fajita seasoning
  9. 1 tsp garlic powder
  10. 1 tsp cumin
  11. Salt and pepper, to taste
  12. Optional toppings: sour cream, shredded cheese, cilantro

Instructions

  • Place chicken breasts in the bottom of the crockpot.
  • Add bell peppers, onions, tomatoes, green chilies, chicken broth, and spices.
  • Stir to combine, ensuring the chicken is well-coated with seasoning.
  • Cover and cook on low for 6-7 hours, or on high for 3-4 hours.
  • Shred the chicken in the pot using two forks, then stir everything together.
  • Serve hot with your favorite toppings like sour cream, shredded cheese, or cilantro.
