Beef Paprikash is a hearty Hungarian dish featuring tender beef simmered in a rich, paprika-infused sauce. With its smoky, savory flavors, this dish is perfect for cozy dinners and pairs beautifully with egg noodles, rice, or mashed potatoes.

- 1 lb beef stew meat, cubed
- 1 medium onion, chopped
- 2 garlic cloves, minced
- 2 tbsp paprika (preferably Hungarian sweet paprika)
- 1 tsp ground caraway seeds (optional)
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 cup beef broth
- 1/2 cup sour cream
- 1 tbsp olive oil
- 1 tbsp flour
Instructions
- Heat olive oil in a large pot over medium heat. Add beef cubes and brown on all sides, about 5-7 minutes. Remove beef and set aside.
- In the same pot, add onion and garlic, cooking until softened, about 3 minutes.
- Stir in paprika, caraway seeds (if using), salt, and pepper. Cook for 1-2 minutes to bloom the spices.
- Sprinkle flour over the onions and stir to form a roux.
- Slowly add beef broth, stirring to combine. Return beef to the pot and bring to a simmer. Cover and cook for 45-60 minutes, or until beef is tender.
- Stir in sour cream and cook for an additional 5 minutes until the sauce is creamy.
- Serve with egg noodles, rice, or mashed potatoes.
Notes
- For a lighter version, replace sour cream with Greek yogurt.
- You can also add bell peppers for an extra layer of flavor.
- This dish improves in flavor after a day, so it’s perfect for leftovers.
