- 1 cup long-grain white rice (uncooked)
- 1 can (10.5 oz) cream of chicken soup
- 1 can (10.5 oz) chicken broth
- 1 cup sour cream
- 1 ½ cups frozen broccoli florets (or fresh, blanched)
- 1 medium onion, chopped
- 1 ½ cups shredded cheddar cheese
- 2 tbsp unsalted butter
- 1 tsp garlic powder
- ½ tsp onion powder
- ½ tsp salt
- ½ tsp black pepper
Instructions
- Preheat the oven to 350°F (175°C). Grease a 9×13-inch baking dish with cooking spray or butter.
- In a large bowl, combine the cream of chicken soup, chicken broth, sour cream, garlic powder, onion powder, salt, and pepper.
- Add the uncooked rice, shredded chicken, chopped onion, and broccoli. Stir until everything is well combined.
- Pour the mixture into the prepared baking dish and spread it evenly.
- Cover the dish with aluminum foil and bake for 45 minutes.
- After 45 minutes, remove the foil and stir the casserole. Sprinkle the shredded cheddar cheese evenly over the top.
- Return the casserole to the oven and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly, and the rice is tender.
- Let the casserole sit for 5 minutes before serving.
