  1. 2 cups cooked chicken, shredded or diced
  2. 1 cup long-grain white rice (uncooked)
  3. 1 can (10.5 oz) cream of chicken soup
  4. 1 can (10.5 oz) chicken broth
  5. 1 cup sour cream
  6. 1 ½ cups frozen broccoli florets (or fresh, blanched)
  7. 1 medium onion, chopped
  8. 1 ½ cups shredded cheddar cheese
  9. 2 tbsp unsalted butter
  10. 1 tsp garlic powder
  11. ½ tsp onion powder
  12. ½ tsp salt
  13. ½ tsp black pepper

Instructions

  • Preheat the oven to 350°F (175°C). Grease a 9×13-inch baking dish with cooking spray or butter.
  • In a large bowl, combine the cream of chicken soup, chicken broth, sour cream, garlic powder, onion powder, salt, and pepper.
  • Add the uncooked rice, shredded chicken, chopped onion, and broccoli. Stir until everything is well combined.
  • Pour the mixture into the prepared baking dish and spread it evenly.
  • Cover the dish with aluminum foil and bake for 45 minutes.
  • After 45 minutes, remove the foil and stir the casserole. Sprinkle the shredded cheddar cheese evenly over the top.
  • Return the casserole to the oven and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly, and the rice is tender.
  • Let the casserole sit for 5 minutes before serving.

Notes

  • For a healthier version, you can use low-fat sour cream and a light version of cream of chicken soup.
  • To save time, use leftover or rotisserie chicken.
  • You can substitute the cheddar cheese with other cheeses like mozzarella or a cheese blend.
