- 2 boneless, skinless chicken breasts
- 1 tbsp olive oil
- Salt and pepper to taste
- 1 avocado, diced
- 1 cup cherry tomatoes, halved
- 1/2 cucumber, sliced
- 1/4 red onion, thinly sliced
- 1/4 cup fresh cilantro, chopped
- 3 tbsp olive oil (for dressing)
- 1 tbsp lime juice
- 1 tsp honey
- 1/2 tsp garlic powder
Instructions
- Season the chicken breasts with olive oil, salt, and pepper. Grill or pan-cook over medium heat for 6-7 minutes per side, or until fully cooked. Let rest for 5 minutes, then slice into strips.
- In a large bowl, combine the avocado, cherry tomatoes, cucumber, red onion, and cilantro.
- In a small bowl, whisk together the olive oil, lime juice, honey, garlic powder, salt, and pepper to create the dressing.
- Add the sliced chicken to the salad, drizzle with the dressing, and toss gently to combine.
- Serve immediately and enjoy!
Notes
- For added crunch, you can sprinkle some toasted nuts or seeds on top.
- This salad can also be made ahead and stored in the fridge for up to 1 day, but add the dressing just before serving.
