Description

This Chicken Avocado Salad is a perfect blend of tender grilled chicken, creamy avocado, and crisp veggies. Topped with a tangy dressing, it’s a satisfying, nutritious meal that’s perfect for lunch, dinner, or meal prep.

 


Ingredients

  1. 2 boneless, skinless chicken breasts
  2. 1 tbsp olive oil
  3. Salt and pepper to taste
  4. 1 avocado, diced
  5. 1 cup cherry tomatoes, halved
  6. 1/2 cucumber, sliced
  7. 1/4 red onion, thinly sliced
  8. 1/4 cup fresh cilantro, chopped
  9. 3 tbsp olive oil (for dressing)
  10. 1 tbsp lime juice
  11. 1 tsp honey
  12. 1/2 tsp garlic powder

Instructions

  • Season the chicken breasts with olive oil, salt, and pepper. Grill or pan-cook over medium heat for 6-7 minutes per side, or until fully cooked. Let rest for 5 minutes, then slice into strips.
  • In a large bowl, combine the avocado, cherry tomatoes, cucumber, red onion, and cilantro.
  • In a small bowl, whisk together the olive oil, lime juice, honey, garlic powder, salt, and pepper to create the dressing.
  • Add the sliced chicken to the salad, drizzle with the dressing, and toss gently to combine.
  • Serve immediately and enjoy!

Notes

  • For added crunch, you can sprinkle some toasted nuts or seeds on top.
  • This salad can also be made ahead and stored in the fridge for up to 1 day, but add the dressing just before serving.
