Description

This hearty and flavorful chicken tortilla soup is packed with tender chicken, zesty seasonings, and a comforting broth. Topped with crispy tortilla strips, avocado, and a sprinkle of cheese, it’s the perfect bowl of comfort!

 


Ingredients

  1. 2 tbsp olive oil
  2. 1 medium onion, chopped
  3. 2 cloves garlic, minced
  4. 1 tsp ground cumin
  5. 1 tsp chili powder
  6. 1/2 tsp smoked paprika
  7. 1 (14.5 oz) can diced tomatoes
  8. 4 cups chicken broth
  9. 2 cups cooked shredded chicken
  10. 1 (4 oz) can diced green chilies
  11. 1/2 cup frozen corn kernels
  12. Salt and pepper, to taste
  13. 4 small corn tortillas, cut into strips
  14. Optional toppings: avocado, shredded cheese, sour cream, cilantro, lime wedges

Instructions

  • Heat olive oil in a large pot over medium heat. Add the chopped onion and garlic, cooking for 3-4 minutes until softened.
  • Stir in cumin, chili powder, and smoked paprika, cooking for another 1 minute.
  • Add diced tomatoes, chicken broth, shredded chicken, green chilies, and corn. Bring to a boil, then reduce heat and simmer for 10-15 minutes.
  • While the soup simmers, heat a small amount of oil in a pan over medium heat and fry the tortilla strips until crispy. Remove and drain on paper towels.
  • Season the soup with salt and pepper to taste.
  • Serve the soup hot, topped with crispy tortilla strips, avocado, cheese, and a squeeze of lime.

  • For a spicier soup, add some diced jalapeños or a few dashes of hot sauce.
