Description
This hearty and flavorful chicken tortilla soup is packed with tender chicken, zesty seasonings, and a comforting broth. Topped with crispy tortilla strips, avocado, and a sprinkle of cheese, it’s the perfect bowl of comfort!

- 2 tbsp olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 tsp ground cumin
- 1 tsp chili powder
- 1/2 tsp smoked paprika
- 1 (14.5 oz) can diced tomatoes
- 4 cups chicken broth
- 2 cups cooked shredded chicken
- 1 (4 oz) can diced green chilies
- 1/2 cup frozen corn kernels
- Salt and pepper, to taste
- 4 small corn tortillas, cut into strips
- Optional toppings: avocado, shredded cheese, sour cream, cilantro, lime wedges
Instructions
- Heat olive oil in a large pot over medium heat. Add the chopped onion and garlic, cooking for 3-4 minutes until softened.
- Stir in cumin, chili powder, and smoked paprika, cooking for another 1 minute.
- Add diced tomatoes, chicken broth, shredded chicken, green chilies, and corn. Bring to a boil, then reduce heat and simmer for 10-15 minutes.
- While the soup simmers, heat a small amount of oil in a pan over medium heat and fry the tortilla strips until crispy. Remove and drain on paper towels.
- Season the soup with salt and pepper to taste.
- Serve the soup hot, topped with crispy tortilla strips, avocado, cheese, and a squeeze of lime.
