- 1 cup dried figs, chopped
- 1/2 cup brewed coffee, cooled
- 1/4 cup unsalted butter, softened
- 1/2 cup brown sugar
- 1 egg
- 1 cup all-purpose flour
- 1/2 tsp baking soda
- 1/2 tsp ground cinnamon
- 1/4 tsp salt
- 1/4 cup chopped walnuts (optional)
Instructions
- Preheat the oven to 350°F (175°C) and grease a small loaf pan.
- In a bowl, mix together the flour, baking soda, cinnamon, and salt.
- In a separate bowl, beat the butter and sugar until fluffy. Add the egg and mix well.
- Slowly add the dry ingredients to the wet ingredients, then stir in the chopped figs, brewed coffee, and walnuts (if using).
- Pour the batter into the prepared loaf pan and bake for 35-40 minutes or until a toothpick comes out clean.
- Let the cake cool before slicing.
Notes
- Use ripe, soft figs for a better texture.
- For a richer flavor, try soaking the figs in coffee overnight.
- This cake can be stored in an airtight container for up to 4 days.
