  • Salt and pepper to taste
  • Fresh rosemary sprigs (for garnish)

Instructions

  1. Prepare Beef: Preheat the oven to 375°F (190°C). Season the beef roast generously with salt, pepper, and fresh thyme. Heat olive oil in a large skillet over medium-high heat and sear the beef on all sides until browned (about 3-4 minutes per side).
  2. Make Cranberry Balsamic Sauce: In a small saucepan, combine cranberries, balsamic vinegar, honey, and garlic. Bring to a simmer over medium heat, stirring occasionally, until the cranberries burst and the sauce thickens (about 10 minutes).
  3. Roast Beef: Place the seared beef roast on a roasting pan. Pour the cranberry balsamic sauce over the roast, making sure it’s well-coated.
  4. Roast: Roast the beef in the preheated oven for 45-60 minutes, or until the internal temperature reaches your desired level of doneness (135°F for medium-rare, 145°F for medium).
  5. Rest and Serve: Let the beef rest for 10 minutes before slicing. Garnish with fresh rosemary and serve with mashed potatoes or roasted vegetables.
