Description
This Cranberry Balsamic Roast Beef features tender, juicy roast beef coated with a tangy cranberry and balsamic glaze. It’s the perfect balance of sweet and savory, making it an ideal dish for festive occasions or a cozy family dinner.
Ingredients
Scale
- 1.5 lbs beef roast (sirloin or tenderloin)
- 1 cup fresh cranberries
- 1/2 cup balsamic vinegar
- 1/4 cup honey
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 1 tsp fresh thyme, chopped
- Salt and pepper to taste
- Fresh rosemary sprigs (for garnish)
Instructions
- Prepare Beef: Preheat the oven to 375°F (190°C). Season the beef roast generously with salt, pepper, and fresh thyme. Heat olive oil in a large skillet over medium-high heat and sear the beef on all sides until browned (about 3-4 minutes per side).
- Make Cranberry Balsamic Sauce: In a small saucepan, combine cranberries, balsamic vinegar, honey, and garlic. Bring to a simmer over medium heat, stirring occasionally, until the cranberries burst and the sauce thickens (about 10 minutes).
- Roast Beef: Place the seared beef roast on a roasting pan. Pour the cranberry balsamic sauce over the roast, making sure it’s well-coated.
- Roast: Roast the beef in the preheated oven for 45-60 minutes, or until the internal temperature reaches your desired level of doneness (135°F for medium-rare, 145°F for medium).
- Rest and Serve: Let the beef rest for 10 minutes before slicing. Garnish with fresh rosemary and serve with mashed potatoes or roasted vegetables.
Notes
- For a richer glaze, add a tablespoon of butter to the cranberry sauce just before serving.
- You can also make the cranberry balsamic sauce ahead of time and store it in the refrigerator for up to 3 days.
- This dish pairs beautifully with a simple green salad or roasted Brussels sprouts.
