- 2 lbs sweet potatoes, peeled and thinly sliced
- 2 cups heavy cream
- 2 garlic cloves, minced
- 1 tsp thyme (fresh or dried)
- 1/2 cup grated Parmesan cheese
- 1/2 cup shredded Gruyère or mozzarella cheese
- Salt and pepper, to taste
- Optional: Fresh parsley for garnish
Instructions
- Preheat the Oven: Preheat to 375°F (190°C). Grease a 9×13-inch baking dish.
- Prepare the Sauce: In a saucepan, heat cream, garlic, thyme, salt, and pepper. Simmer for 5 minutes, then remove from heat.
- Layer the Potatoes: Arrange half of the sweet potatoes in the dish. Pour over half the cream mixture and sprinkle with cheeses. Repeat the layers.
- Bake: Cover with foil and bake for 30 minutes. Remove foil, bake for another 20-25 minutes until golden and bubbly.
- Serve: Let cool slightly, garnish with parsley, and enjoy!
Notes
- For added flavor, sprinkle breadcrumbs on top before baking.
- Adjust the creaminess by adding a splash of milk to the sauce if needed.
