- 1 ½ cups gluten-free all-purpose flour
- ½ cup cornstarch
- 1 tsp baking powder
- ¼ tsp salt
- ½ cup butter, softened
- ½ cup sugar
- 1 large egg
- 1 tsp vanilla extract
- ½ cup cherry pie filling (gluten-free)
- 1 tbsp milk (if needed)
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, mix gluten-free flour, cornstarch, baking powder, and salt.
- In another bowl, cream together butter and sugar. Add egg and vanilla, mixing until smooth.
- Gradually add dry ingredients to the butter mixture, mixing until combined. If dough is too dry, add a tablespoon of milk.
- Scoop dough by the tablespoon, place a small spoonful of cherry pie filling in the center, then seal the dough around it.
- Bake for 12-15 minutes or until golden brown around the edges.
- Allow to cool on a wire rack before serving.
Notes
For added flavor, dust with powdered sugar once the cookies have cooled. Make sure your cherry pie filling is gluten-free for a completely safe treat.
