Description

These gluten-free cherry pie cookies combine the sweet, tangy flavor of cherries with the buttery, crisp texture of a cookie. They’re the perfect treat for those following a gluten-free diet, yet they taste so good everyone will want to indulge!


Ingredients

  • 1 ½ cups gluten-free all-purpose flour
  • ½ cup cornstarch
  • 1 tsp baking powder
  • ¼ tsp salt
  • ½ cup butter, softened
  • ½ cup sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • ½ cup cherry pie filling (gluten-free)
  • 1 tbsp milk (if needed)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, mix gluten-free flour, cornstarch, baking powder, and salt.
  3. In another bowl, cream together butter and sugar. Add egg and vanilla, mixing until smooth.
  4. Gradually add dry ingredients to the butter mixture, mixing until combined. If dough is too dry, add a tablespoon of milk.
  5. Scoop dough by the tablespoon, place a small spoonful of cherry pie filling in the center, then seal the dough around it.
  6. Bake for 12-15 minutes or until golden brown around the edges.
  7. Allow to cool on a wire rack before serving.

Notes

For added flavor, dust with powdered sugar once the cookies have cooled. Make sure your cherry pie filling is gluten-free for a completely safe treat.
