- 1 cup cherry tomatoes, halved
- 1/2 cucumber, sliced
- 1/4 red onion, thinly sliced
- 1/2 cup roasted red peppers, sliced
- 1/2 cup provolone cheese, cubed
- 1/2 cup salami, chopped
- 1/4 cup Kalamata olives, pitted and sliced
- 1/4 cup pepperoncini, sliced
- 3 tbsp olive oil
- 2 tbsp red wine vinegar
- 1 tsp Dijon mustard
- 1/2 tsp garlic powder
- Salt and pepper to taste
Instructions
- In a large bowl, combine the romaine lettuce, cherry tomatoes, cucumber, red onion, roasted red peppers, provolone, salami, olives, and pepperoncini.
- In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, garlic powder, salt, and pepper to create the dressing.
- Drizzle the dressing over the salad and toss gently to combine.
- Serve immediately or chill for 10-15 minutes to allow the flavors to meld.
