Ingredients

  1. 1 lb Italian sausage (mild or spicy)
  2. 4 slices bacon, chopped
  3. 1 small onion, diced
  4. 3 cloves garlic, minced
  5. 4 cups chicken broth
  6. 1 cup heavy cream
  7. 4 cups fresh kale, chopped
  8. 1/2 tsp red pepper flakes (optional)
  9. Salt and pepper, to taste
  10. 1/2 cup Parmesan cheese, grated (optional)

Instructions

  • In a large pot, cook bacon over medium heat until crispy. Remove and set aside, leaving some bacon fat in the pot.
  • Add the Italian sausage to the pot and cook, breaking it up into crumbles, until browned.
  • Stir in the onion and garlic, cooking until the onion is softened, about 3-4 minutes.
  • Pour in the chicken broth and bring the soup to a simmer.
  • Add the kale, red pepper flakes (if using), salt, and pepper. Simmer for 5-7 minutes, until the kale is tender.
  • Reduce the heat and stir in the heavy cream. Cook for another 3 minutes to heat through.
  • Stir in the cooked bacon and Parmesan cheese (if using) before serving.

  • For a richer soup, add more heavy cream or use full-fat coconut milk as a dairy-free option.
  • You can substitute the sausage with ground turkey or chicken for a lighter version.
