- 1 lb Italian sausage (mild or spicy)
- 4 slices bacon, chopped
- 1 small onion, diced
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 cup heavy cream
- 4 cups fresh kale, chopped
- 1/2 tsp red pepper flakes (optional)
- Salt and pepper, to taste
- 1/2 cup Parmesan cheese, grated (optional)
Instructions
- In a large pot, cook bacon over medium heat until crispy. Remove and set aside, leaving some bacon fat in the pot.
- Add the Italian sausage to the pot and cook, breaking it up into crumbles, until browned.
- Stir in the onion and garlic, cooking until the onion is softened, about 3-4 minutes.
- Pour in the chicken broth and bring the soup to a simmer.
- Add the kale, red pepper flakes (if using), salt, and pepper. Simmer for 5-7 minutes, until the kale is tender.
- Reduce the heat and stir in the heavy cream. Cook for another 3 minutes to heat through.
- Stir in the cooked bacon and Parmesan cheese (if using) before serving.
