- 1 lb cremini or white mushrooms, sliced
- 1 tbsp olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 tsp chili powder
- 1 tsp cumin
- 1/2 tsp paprika
- Salt and pepper, to taste
- 8 small corn or flour tortillas
- 1/2 cup fresh cilantro, chopped
- 1/2 cup diced tomatoes
- 1/4 cup red onion, thinly sliced
- 1 avocado, sliced
- Lime wedges (for serving)
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add the diced onion and cook for 3-4 minutes, until softened.
- Add garlic and sliced mushrooms to the skillet and cook for 7-8 minutes, until mushrooms are tender and browned.
- Stir in the chili powder, cumin, paprika, salt, and pepper, cooking for another 2 minutes to combine the spices.
- Warm the tortillas in a separate skillet or microwave.
- Assemble the tacos by spooning the mushroom mixture into each tortilla.
- Top with diced tomatoes, red onion, avocado slices, and chopped cilantro.
- Serve with lime wedges for squeezing on top.

- For extra flavor, add a drizzle of sour cream or a sprinkle of cheese.
- You can add extra veggies like bell peppers or zucchini for more texture and color.
