Description

These Delicious Mushroom Tacos are a flavorful and satisfying vegetarian alternative to traditional tacos. With savory, sautéed mushrooms, spices, and fresh toppings, they make for a healthy, hearty meal that’s perfect for Taco Tuesday or any night of the week!

 


Ingredients

  1. 1 lb cremini or white mushrooms, sliced
  2. 1 tbsp olive oil
  3. 1 small onion, diced
  4. 2 cloves garlic, minced
  5. 1 tsp chili powder
  6. 1 tsp cumin
  7. 1/2 tsp paprika
  8. Salt and pepper, to taste
  9. 8 small corn or flour tortillas
  10. 1/2 cup fresh cilantro, chopped
  11. 1/2 cup diced tomatoes
  12. 1/4 cup red onion, thinly sliced
  13. 1 avocado, sliced
  14. Lime wedges (for serving)

Instructions

  • Heat olive oil in a large skillet over medium heat.
  • Add the diced onion and cook for 3-4 minutes, until softened.
  • Add garlic and sliced mushrooms to the skillet and cook for 7-8 minutes, until mushrooms are tender and browned.
  • Stir in the chili powder, cumin, paprika, salt, and pepper, cooking for another 2 minutes to combine the spices.
  • Warm the tortillas in a separate skillet or microwave.
  • Assemble the tacos by spooning the mushroom mixture into each tortilla.
  • Top with diced tomatoes, red onion, avocado slices, and chopped cilantro.
  • Serve with lime wedges for squeezing on top.

Notes

  • For extra flavor, add a drizzle of sour cream or a sprinkle of cheese.
  • You can add extra veggies like bell peppers or zucchini for more texture and color.
  • These tacos also work well with a side of rice or beans.
