- 1 ½ cups graham cracker crumbs
- ½ cup butter, melted
- 2 cups cream cheese, softened
- 1 cup powdered sugar
- 2 tsp peppermint extract
- 2 large eggs
- 1 cup sour cream
- 2 tbsp all-purpose flour
- Crushed candy canes (for garnish)
Instructions
- Preheat the oven to 325°F (160°C).
- Mix graham cracker crumbs and melted butter, press into the base of a greased 9×9-inch baking pan. Bake for 10 minutes, then cool.
- In a bowl, beat cream cheese until smooth, add sugar, peppermint extract, eggs, sour cream, and flour. Beat until combined.
- Pour the cheesecake batter over the cooled crust and bake for 45-50 minutes or until the center is set.
- Allow to cool, then refrigerate for at least 4 hours.
- Garnish with crushed candy canes before serving.
Notes
For a stronger peppermint flavor, increase the peppermint extract to 2 ½ teaspoons. Ensure bars are fully cooled before refrigerating for the best texture.
