This Strawberry Jello Poke Cake is a fun and vibrant dessert that’s perfect for any celebration! With a moist cake soaked in sweet strawberry Jello and topped with whipped cream, it’s a refreshing treat that everyone will love.

  1. 1 box white cake mix
  2. 1 cup water
  3. 1/3 cup vegetable oil
  4. 3 large eggs
  5. 1 package (3 oz) strawberry Jello
  6. 1 cup boiling water
  7. 1 cup cold water
  8. 1 tub (8 oz) whipped topping (like Cool Whip)
  9. 1/2 cup fresh strawberries (sliced, for topping

Instructions

  • Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a bowl, whisk together flour, cocoa powder, baking soda, and salt.
  • In a separate bowl, cream together butter and sugar until light and fluffy.
  • Beat in the egg and vanilla extract until smooth.
  • Gradually add the dry ingredients to the wet mixture, alternating with milk, until just combined.
  • Roll the dough into balls, then roll each ball in sugar before placing on the baking sheet.
  • Flatten each ball slightly with the back of a spoon.
  • Bake for 8-10 minutes, until the edges are set but the centers are still soft.
  • Let cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

  • Preheat oven to 350°F (175°C). Grease and flour a 9×13-inch baking dish.
  • Prepare the cake mix according to the package instructions, using water, oil, and eggs. Bake as directed and let it cool in the pan for 10 minutes.
  • While the cake is cooling, dissolve the strawberry Jello in 1 cup of boiling water. Stir in 1 cup of cold water and mix until fully dissolved.
  • Once the cake has cooled slightly, use a fork to poke holes all over the cake.
  • Pour the prepared Jello over the cake, allowing it to soak into the holes. Let the cake cool completely in the pan.
  • Once the cake is cooled, spread whipped topping evenly over the cake.
  • Top with fresh sliced strawberries before serving.
