For the sweet potatoes:
- 4 large sweet potatoes, peeled and cubed
- ½ cup butter, melted
- 1/3 cup brown sugar
- ½ cup milk
- 1 tsp vanilla extract
- 1/2 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1/4 tsp salt
- 2 large eggs
For the topping:
- 1 cup chopped pecans
- 1/2 cup brown sugar
- 1/3 cup all-purpose flour
- 1/4 cup butter, melted
Instructions
- Preheat the oven to 350°F (175°C). Grease a 9×13-inch baking dish.
- Boil the sweet potatoes in a large pot of water for 12-15 minutes, or until soft. Drain and mash until smooth.
- In a large mixing bowl, combine the mashed sweet potatoes with melted butter, brown sugar, milk, vanilla extract, cinnamon, nutmeg, salt, and eggs. Mix until smooth and well combined.
- Transfer the sweet potato mixture to the prepared baking dish and spread it evenly.
- In a small bowl, combine the pecans, brown sugar, flour, and melted butter. Stir until the mixture is crumbly.
- Sprinkle the pecan topping evenly over the sweet potato mixture.
- Bake for 25-30 minutes, or until the topping is golden brown and the casserole is heated through.
- Let it cool for a few minutes before serving.
Notes
For an extra burst of flavor, add a handful of mini marshmallows to the topping during the last 5 minutes of baking. Store leftovers in an airtight container in the fridge for up to 3 days.
