Description

This Delicious Sweet Potatoes Casserole is the perfect side dish for any holiday meal. With its creamy, smooth sweet potatoes topped with a crunchy, buttery pecan streusel, it’s a comforting and flavorful addition to your table!

For the sweet potatoes:

  • 4 large sweet potatoes, peeled and cubed
  • ½ cup butter, melted
  • 1/3 cup brown sugar
  • ½ cup milk
  • 1 tsp vanilla extract
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/4 tsp salt
  • 2 large eggs

For the topping:

  • 1 cup chopped pecans
  • 1/2 cup brown sugar
  • 1/3 cup all-purpose flour
  • 1/4 cup butter, melted

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×13-inch baking dish.
  2. Boil the sweet potatoes in a large pot of water for 12-15 minutes, or until soft. Drain and mash until smooth.
  3. In a large mixing bowl, combine the mashed sweet potatoes with melted butter, brown sugar, milk, vanilla extract, cinnamon, nutmeg, salt, and eggs. Mix until smooth and well combined.
  4. Transfer the sweet potato mixture to the prepared baking dish and spread it evenly.
  5. In a small bowl, combine the pecans, brown sugar, flour, and melted butter. Stir until the mixture is crumbly.
  6. Sprinkle the pecan topping evenly over the sweet potato mixture.
  7. Bake for 25-30 minutes, or until the topping is golden brown and the casserole is heated through.
  8. Let it cool for a few minutes before serving.

Notes

For an extra burst of flavor, add a handful of mini marshmallows to the topping during the last 5 minutes of baking. Store leftovers in an airtight container in the fridge for up to 3 days.
