- 2 garlic cloves, minced
- 1 tbsp ginger, grated
- 2 tbsp Thai red curry paste
- 4 cups chicken or vegetable broth
- 1 can (14 oz) coconut milk
- 1 tbsp soy sauce
- 1 tsp sugar
- Juice of 1 lime
- For the Dumplings:
- 12–15 frozen or fresh dumplings (pork, chicken, or vegetable)
- For Garnish:
- Fresh cilantro, chopped
- Sliced green onions
- Lime wedges
Instructions
- Make the Broth: Heat oil in a large pot over medium heat. Sauté garlic and ginger until fragrant. Stir in the red curry paste and cook for 1 minute.
- Simmer the Soup: Add broth, coconut milk, soy sauce, and sugar. Bring to a simmer and let cook for 10 minutes. Squeeze in lime juice to brighten the flavor.
- Cook the Dumplings: Drop dumplings into the simmering broth and cook according to package instructions, about 5-7 minutes.
- Serve: Ladle soup into bowls, top with cilantro, green onions, and a squeeze of lime
