Description

This Easy Buffalo Chicken Casserole combines tender chicken, spicy buffalo sauce, creamy cheese, and a crunchy topping, creating the perfect comfort food with a kick. It’s simple to make and perfect for game day or a weeknight dinner that packs a punch!

  1. 2 cups cooked chicken (shredded)
  2. 1 cup buffalo sauce
  3. 1 cup ranch dressing
  4. 1 cup shredded cheddar cheese
  5. 1 cup frozen mixed vegetables (peas, carrots, corn)
  6. 2 cups cooked rice
  7. 1/2 cup breadcrumbs
  8. 2 tbsp butter (melted)
  9. Salt and pepper (to taste)

Instructions

  • Preheat the oven to 375°F (190°C).
  • In a large bowl, combine the shredded chicken, buffalo sauce, ranch dressing, cheddar cheese, and mixed vegetables. Season with salt and pepper.
  • Stir in the cooked rice and mix everything together.
  • Pour the mixture into a greased casserole dish and spread it evenly.
  • In a small bowl, mix the melted butter with breadcrumbs and sprinkle it over the casserole.
  • Bake for 20-25 minutes, or until the top is golden brown and bubbly.
  • Let it cool slightly before serving.

Notes

  • For an extra spicy kick, add more buffalo sauce or a dash of hot sauce.
  • You can substitute the rice with cauliflower rice for a low-carb version.
  • If you prefer blue cheese, swap out the ranch dressing for blue cheese dressing.
