- 1 cup buffalo sauce
- 1 cup ranch dressing
- 1 cup shredded cheddar cheese
- 1 cup frozen mixed vegetables (peas, carrots, corn)
- 2 cups cooked rice
- 1/2 cup breadcrumbs
- 2 tbsp butter (melted)
- Salt and pepper (to taste)
Instructions
- Preheat the oven to 375°F (190°C).
- In a large bowl, combine the shredded chicken, buffalo sauce, ranch dressing, cheddar cheese, and mixed vegetables. Season with salt and pepper.
- Stir in the cooked rice and mix everything together.
- Pour the mixture into a greased casserole dish and spread it evenly.
- In a small bowl, mix the melted butter with breadcrumbs and sprinkle it over the casserole.
- Bake for 20-25 minutes, or until the top is golden brown and bubbly.
- Let it cool slightly before serving.

- For an extra spicy kick, add more buffalo sauce or a dash of hot sauce.
- You can substitute the rice with cauliflower rice for a low-carb version.
