Instructions
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a large bowl, cream together butter and sugar until light and fluffy.
- Add egg and vanilla extract, mixing until smooth.
- In a separate bowl, combine almond flour, coconut flour, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until well combined.
- Scoop tablespoon-sized portions of dough and roll into balls. Place on the prepared baking sheet and gently flatten with a fork or your hands.
- Bake for 8-10 minutes, or until the edges are golden brown. Let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
