Ingredients

  1. 2 cups almond flour
  2. 1/4 cup coconut flour
  3. 1/2 cup unsalted butter, softened
  4. 1/4 cup granulated sugar (or coconut sugar)
  5. 1 large egg
  6. 1 tsp vanilla extract
  7. 1/2 tsp baking soda
  8. Pinch of salt

Instructions

  • Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  • In a large bowl, cream together butter and sugar until light and fluffy.
  • Add egg and vanilla extract, mixing until smooth.
  • In a separate bowl, combine almond flour, coconut flour, baking soda, and salt.
  • Gradually add the dry ingredients to the wet ingredients, mixing until well combined.
  • Scoop tablespoon-sized portions of dough and roll into balls. Place on the prepared baking sheet and gently flatten with a fork or your hands.
  • Bake for 8-10 minutes, or until the edges are golden brown. Let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
  • Optionally, sprinkle with a little extra sugar before baking for added sweetness.

Notes

  • For a fun twist, try adding a pinch of cinnamon or lemon zest to the dough.
  • If you prefer a softer texture, reduce the baking time slightly.
