Description

This creamy, zesty dip is packed with the irresistible flavors of Mexican street corn (Elote), combining sweet corn, smoky spices, and tangy lime for the perfect appetizer or snack. Serve it with chips, veggies, or as a side to any Mexican dish.

  1. 2 cups frozen or fresh corn kernels (thawed if frozen)
  2. 1/2 cup mayonnaise
  3. 1/2 cup sour cream
  4. 1 cup crumbled feta cheese (or cotija cheese)
  5. 1 tablespoon lime juice
  6. 1 teaspoon chili powder
  7. 1/2 teaspoon smoked paprika
  8. 1/4 teaspoon garlic powder
  9. 1/4 teaspoon salt
  10. 1/4 teaspoon black pepper
  11. Fresh cilantro (optional, for garnish)

Instructions

  • In a skillet, cook corn over medium heat for 5-7 minutes until slightly charred. Stir occasionally.
  • In a large bowl, mix together mayonnaise, sour cream, feta, lime juice, chili powder, paprika, garlic powder, salt, and pepper.
  • Add the cooked corn to the mixture and stir until well combined.
  • Garnish with fresh cilantro, if desired.
  • Serve immediately with tortilla chips, crackers, or veggies.

Notes

  • You can use grilled or roasted corn for extra flavor.
