Description

This comforting dish combines tender chicken, savory vegetables, and soft dumplings, all cooked effortlessly in your slow cooker. It’s the perfect hearty meal for busy days!

 


Ingredients

  1. 2 lbs boneless, skinless chicken breasts
  2. 1 onion, diced
  3. 2 carrots, sliced
  4. 2 celery stalks, sliced
  5. 3 cups chicken broth
  6. 1 tsp garlic powder
  7. 1/2 tsp dried thyme
  8. Salt and pepper to taste
  9. 1 can (10 oz) cream of chicken soup
  10. 1 can (16 oz) refrigerated biscuit dough (or dumplings of choice)

Instructions

  • Prepare the chicken and veggies: Place the chicken breasts, onion, carrots, celery, and garlic powder in the slow cooker.
  • Add broth and soup: Pour in the chicken broth and stir in the cream of chicken soup. Season with thyme, salt, and pepper.
  • Cook: Cover and cook on low for 6-7 hours, or until the chicken is fully cooked and vegetables are tender.
  • Shred the chicken: Remove the chicken, shred it with two forks, and return it to the slow cooker.
  • Add the dumplings: Cut the biscuit dough into small pieces and drop them on top of the chicken mixture. Cover and cook for an additional 30-45 minutes, until the dumplings are cooked through and fluffy.
  • Serve warm and enjoy!

Notes

  • You can add extra vegetables like peas or potatoes for more variety.
  • If you prefer a thicker broth, add a tablespoon of cornstarch mixed with water before adding the dumplings.
