- 2 lbs boneless, skinless chicken breasts
- 1 onion, diced
- 2 carrots, sliced
- 2 celery stalks, sliced
- 3 cups chicken broth
- 1 tsp garlic powder
- 1/2 tsp dried thyme
- Salt and pepper to taste
- 1 can (10 oz) cream of chicken soup
- 1 can (16 oz) refrigerated biscuit dough (or dumplings of choice)
Instructions
- Prepare the chicken and veggies: Place the chicken breasts, onion, carrots, celery, and garlic powder in the slow cooker.
- Add broth and soup: Pour in the chicken broth and stir in the cream of chicken soup. Season with thyme, salt, and pepper.
- Cook: Cover and cook on low for 6-7 hours, or until the chicken is fully cooked and vegetables are tender.
- Shred the chicken: Remove the chicken, shred it with two forks, and return it to the slow cooker.
- Add the dumplings: Cut the biscuit dough into small pieces and drop them on top of the chicken mixture. Cover and cook for an additional 30-45 minutes, until the dumplings are cooked through and fluffy.
- Serve warm and enjoy!
Notes
- You can add extra vegetables like peas or potatoes for more variety.
- If you prefer a thicker broth, add a tablespoon of cornstarch mixed with water before adding the dumplings.
