Description

A hearty, nutritious, and comforting soup made with split peas and simple ingredients, perfect for a cozy meal.

 


Ingredients

  • 1 1/2 cups dried green split peas, rinsed
  • 1 large onion, chopped
  • 2 medium carrots, diced
  • 2 celery stalks, chopped
  • 2 cloves garlic, minced
  • 1 bay leaf
  • 6 cups vegetable or chicken broth
  • 1 tsp dried thyme
  • Salt and pepper, to taste
  • Optional: 1 ham hock or diced cooked ham (for added flavor)

Instructions

  1. Sauté Vegetables: In a large pot, sauté onion, carrots, and celery until soft, about 5 minutes. Add garlic and cook for 1 minute.
  2. Simmer Soup: Add split peas, broth, bay leaf, and thyme. Bring to a boil, then reduce heat and simmer uncovered for 45-60 minutes, stirring occasionally.
  3. Blend (Optional): For a creamier texture, use an immersion blender to puree part of the soup.
  4. Season and Serve: Remove the bay leaf, season with salt and pepper, and serve warm.

Notes

  • For a smoky flavor, add diced ham or a ham hock while simmering.
  • The soup thickens as it cools. Add water or broth to adjust consistency when reheating.
