- 2 medium carrots, diced
- 2 celery stalks, chopped

- 1 bay leaf
- 6 cups vegetable or chicken broth

- Salt and pepper, to taste
- Optional: 1 ham hock or diced cooked ham (for added flavor)
Instructions
- Sauté Vegetables: In a large pot, sauté onion, carrots, and celery until soft, about 5 minutes. Add garlic and cook for 1 minute.
- Simmer Soup: Add split peas, broth, bay leaf, and thyme. Bring to a boil, then reduce heat and simmer uncovered for 45-60 minutes, stirring occasionally.
- Blend (Optional): For a creamier texture, use an immersion blender to puree part of the soup.
- Season and Serve: Remove the bay leaf, season with salt and pepper, and serve warm.
Notes
- For a smoky flavor, add diced ham or a ham hock while simmering.
- The soup thickens as it cools. Add water or broth to adjust consistency when reheating.
