This Beef Enchilada Casserole brings the bold flavors of a traditional enchilada into a simple, one-pan dish. With seasoned ground beef, layers of tortillas, enchilada sauce, and melted cheese, it’s a family favorite that’s perfect for a weeknight meal or a crowd-pleasing dinner.

- 1 lb ground beef
- 1 onion (chopped)
- 1 can (10 oz) enchilada sauce
- 1 can (4 oz) diced green chilies
- 1 tsp chili powder
- 1 tsp cumin
- 8 corn tortillas (cut into strips)
- 2 cups shredded cheddar cheese
- 1 cup sour cream
- 1 tbsp olive oil
- Salt and pepper (to taste)
Instructions
- Preheat your oven to 375°F (190°C).
- In a large skillet, heat olive oil over medium heat. Sauté the onions until soft, then add the ground beef. Cook until browned, breaking it up as it cooks. Drain excess fat.
- Stir in the enchilada sauce, green chilies, chili powder, cumin, salt, and pepper. Let it simmer for 5 minutes.
- In a greased casserole dish, layer half of the tortilla strips, followed by half of the beef mixture, and top with a layer of cheese. Repeat the layers.
- Bake for 20-25 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and top with sour cream before serving.
Notes
- For extra heat, add jalapeños or use spicy enchilada sauce.
- You can substitute ground turkey or chicken for the beef for a lighter version.
- This casserole is great for leftovers and can be stored in the fridge for up to 3 days.
