Description

This Beef Enchilada Casserole brings the bold flavors of a traditional enchilada into a simple, one-pan dish. With seasoned ground beef, layers of tortillas, enchilada sauce, and melted cheese, it’s a family favorite that’s perfect for a weeknight meal or a crowd-pleasing dinner.

 


Ingredients

  1. 1 lb ground beef
  2. 1 onion (chopped)
  3. 1 can (10 oz) enchilada sauce
  4. 1 can (4 oz) diced green chilies
  5. 1 tsp chili powder
  6. 1 tsp cumin
  7. 8 corn tortillas (cut into strips)
  8. 2 cups shredded cheddar cheese
  9. 1 cup sour cream
  10. 1 tbsp olive oil
  11. Salt and pepper (to taste)

Instructions

  • Preheat your oven to 375°F (190°C).
  • In a large skillet, heat olive oil over medium heat. Sauté the onions until soft, then add the ground beef. Cook until browned, breaking it up as it cooks. Drain excess fat.
  • Stir in the enchilada sauce, green chilies, chili powder, cumin, salt, and pepper. Let it simmer for 5 minutes.
  • In a greased casserole dish, layer half of the tortilla strips, followed by half of the beef mixture, and top with a layer of cheese. Repeat the layers.
  • Bake for 20-25 minutes, or until the cheese is melted and bubbly.
  • Remove from the oven and top with sour cream before serving.

Notes

  • For extra heat, add jalapeños or use spicy enchilada sauce.
  • You can substitute ground turkey or chicken for the beef for a lighter version.
  • This casserole is great for leftovers and can be stored in the fridge for up to 3 days.
