Description

These fluffy pancakes are light, airy, and irresistibly delicious. Perfect for a weekend breakfast or brunch, they’re quick to make and can be topped with your favorite syrup, fruit, or whipped cream.

 


Ingredients

  1. 1 1/2 cups all-purpose flour
  2. 3 1/2 tsp baking powder
  3. 1 tbsp sugar
  4. 1/2 tsp salt
  5. 1 1/4 cups milk
  6. 1 large egg
  7. 3 tbsp melted butter
  8. 1 tsp vanilla extract

Instructions

  • Preheat a griddle or pan over medium heat and lightly grease with butter or cooking spray.
  • Mix dry ingredients: In a bowl, combine flour, baking powder, sugar, and salt.
  • Mix wet ingredients: In a separate bowl, whisk together milk, egg, melted butter, and vanilla.
  • Combine the wet and dry ingredients: Pour the wet mixture into the dry ingredients and stir until just combined. The batter should be slightly lumpy.
  • Cook the pancakes: Pour 1/4 cup of batter onto the hot griddle for each pancake. Cook until bubbles form on the surface, then flip and cook for another 1-2 minutes until golden brown.
  • Serve warm with your favorite toppings.

Notes

 

  • For extra fluff, don’t overmix the batter; it’s okay if it’s a bit lumpy.
  • You can keep pancakes warm in the oven at 200°F (93°C) while you finish cooking the rest.
