- 1 lb ground beef
- 1 onion, diced
- 2 carrots, peeled and chopped
- 2 celery stalks, chopped
- 2 cloves garlic, minced
- 4 cups beef broth
- 1 can (14.5 oz) diced tomatoes
- 1 cup frozen peas
- 2 medium potatoes, peeled and diced
- 1 tsp dried oregano
- 1 tsp dried basil
- Salt and pepper, to taste
- 1 tbsp olive oil (for cooking)
Instructions
- In a large pot, heat olive oil over medium heat. Add ground beef and cook until browned, breaking it apart as it cooks. Drain excess fat.
- Add onion, carrots, celery, and garlic to the pot. Sauté for 5-7 minutes until the vegetables start to soften.
- Pour in the beef broth, diced tomatoes, and potatoes. Stir in oregano, basil, salt, and pepper.
- Bring to a boil, then reduce heat and let simmer for 20-25 minutes, or until the potatoes are tender.
- Add peas and cook for an additional 5 minutes.
- Taste and adjust seasoning as needed before serving.
