A warm and filling dish with tender chicken and pearl couscous, simmered in a rich broth for a deliciously hearty meal.

- 2 chicken breasts (boneless, skinless), chopped
- 1 cup pearl couscous
- 1 medium onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 can (14.5 oz) diced tomatoes
- 1 tsp ground cumin
- 1 tsp dried thyme
- Salt and pepper, to taste
- Olive oil for cooking
Instructions
- Heat olive oil in a large pot over medium heat. Add chicken and cook until browned, about 5-7 minutes. Remove and set aside.
- In the same pot, sauté onion, carrots, and celery until softened, about 5 minutes.
- Add garlic, cumin, thyme, salt, and pepper. Stir for 1 minute.
- Add chicken broth, diced tomatoes, and cooked chicken. Bring to a boil.
- Reduce heat and stir in the pearl couscous. Simmer for 10-12 minutes, or until couscous is tender.
- Adjust seasoning to taste and serve hot.
Notes
- You can use vegetable broth for a vegetarian version.
- Leftovers can be stored in the fridge for up to 3 days.
