Description

A warm and filling dish with tender chicken and pearl couscous, simmered in a rich broth for a deliciously hearty meal.


Ingredients

  1. 2 chicken breasts (boneless, skinless), chopped
  2. 1 cup pearl couscous
  3. 1 medium onion, chopped
  4. 2 carrots, diced
  5. 2 celery stalks, diced
  6. 3 cloves garlic, minced
  7. 4 cups chicken broth
  8. 1 can (14.5 oz) diced tomatoes
  9. 1 tsp ground cumin
  10. 1 tsp dried thyme
  11. Salt and pepper, to taste
  12. Olive oil for cooking

Instructions

  • Heat olive oil in a large pot over medium heat. Add chicken and cook until browned, about 5-7 minutes. Remove and set aside.
  • In the same pot, sauté onion, carrots, and celery until softened, about 5 minutes.
  • Add garlic, cumin, thyme, salt, and pepper. Stir for 1 minute.
  • Add chicken broth, diced tomatoes, and cooked chicken. Bring to a boil.
  • Reduce heat and stir in the pearl couscous. Simmer for 10-12 minutes, or until couscous is tender.
  • Adjust seasoning to taste and serve hot.

Notes

  • You can use vegetable broth for a vegetarian version.
  • Leftovers can be stored in the fridge for up to 3 days.
