- 1 1/2 cups almond flour
- 1/4 cup unsweetened cocoa powder
- 1/4 cup coconut flour
- 1/4 cup maple syrup
- 1/4 cup coconut oil, melted
- 1 large egg
- 1 tsp vanilla extract
- 1/2 tsp baking soda
- Pinch of salt
- 1/4 cup coconut sugar (for rolling, optional)
Instructions
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a large bowl, combine almond flour, cocoa powder, coconut flour, baking soda, and salt.
- In another bowl, whisk together the egg, maple syrup, melted coconut oil, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and mix until well combined.
- Roll dough into tablespoon-sized balls, then roll each ball in coconut sugar if desired.
- Place the dough balls on the prepared baking sheet and flatten slightly with a fork or your hands.
- Bake for 8-10 minutes, or until the edges are firm and slightly cracked. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack.
Notes
- For a festive touch, add some chocolate chips or chopped dark chocolate to the dough before baking.
- These cookies are slightly soft when warm but will firm up as they cool.
