Ingredients

  • 1 cup creamy peanut butter
  • 1/4 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1 tsp vanilla extract
  • 2 cups chocolate chips (semi-sweet or milk)
  • 1 tbsp coconut oil (optional, for smooth coating)

Instructions

  1. Make the Dough: In a bowl, mix peanut butter, softened butter, vanilla, and powdered sugar until smooth.
  2. Shape: Roll into 1-inch balls and place them on a parchment-lined tray. Chill in the freezer for 20 minutes.
  3. Melt Chocolate: Melt chocolate chips with coconut oil in a microwave-safe bowl in 30-second intervals until smooth.
  4. Dip: Use a fork or toothpick to dip each ball into the chocolate, tapping off excess. Place back on the tray.
  5. Set: Chill until the chocolate hardens.

Notes

  • Sprinkle with sea salt or drizzle with white chocolate for extra flair.
  • Store in an airtight container in the fridge for up to 1 week.
