- 1/2 cup butter (softened)
- 1 cup canned pumpkin puree
- 1/2 cup brown sugar
- 1/4 cup white sugar
- 1 large egg
- 1 tsp vanilla extract
- 1 1/2 cups chocolate chips
Instructions
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, whisk together flour, baking soda, cinnamon, pumpkin pie spice, and salt.
- In a separate bowl, cream together butter, pumpkin puree, brown sugar, white sugar, egg, and vanilla extract.
- Gradually add the dry ingredients to the wet ingredients and mix until combined.
- Fold in the chocolate chips.
- Drop spoonfuls of dough onto the prepared baking sheet.
- Bake for 12-15 minutes, or until edges are golden.
- Cool on a wire rack before serving.
Notes
- For a more intense pumpkin flavor, add extra pumpkin spice.
- These cookies are best enjoyed fresh, but can be stored in an airtight container for up to 5 days.
