Instructions
- Prepare the Crust: Preheat oven to 325°F (165°C). Combine graham cracker crumbs, butter, and sugar. Press into the bottom of a greased 9-inch springform pan. Bake for 10 minutes; let cool.
- Make the Cheesecake Filling: Beat cream cheese, sugar, eggs, and vanilla until smooth.
- Create the Pumpkin Swirl: In a separate bowl, mix pumpkin puree, sugar, pumpkin spice, and egg until well combined.
- Assemble and Swirl: Pour the cheesecake batter over the crust. Drop spoonfuls of the pumpkin mixture on top and use a knife to swirl gently for a marbled effect.
- Bake: Bake for 45-50 minutes, or until the center is set. Cool completely, then chill for at least 4 hours before serving.
