- 1 tsp rosemary, chopped
- 1 tsp thyme, chopped

Instructions
- Prepare the Beef: Preheat oven to 400°F (200°C). Butterfly the beef tenderloin, opening it like a book, and season both sides with salt and pepper.
- Make the Filling: In a skillet, heat 1 tbsp olive oil. Sauté garlic, spinach, and sun-dried tomatoes until spinach wilts. Remove from heat and mix in feta or goat cheese.
- Stuff and Roll: Spread the filling evenly over the beef. Roll the tenderloin tightly and secure with kitchen twine at 2-inch intervals.
- Sear and Roast: Heat remaining olive oil in a skillet over medium-high heat. Sear the beef on all sides until browned. Transfer to a baking dish and roast for 20-25 minutes, or until the internal temperature reaches 135°F (medium-rare).
- Rest and Serve: Let the beef rest for 10 minutes before slicing. Garnish with fresh herbs if desired.
