Description

These decadent Red Velvet Cheesecake Brownie Bars feature a rich, fudgy red velvet brownie base topped with a creamy, tangy cheesecake layer. The beautiful swirl of red velvet and cheesecake makes them as delightful to look at as they are to eat!

For the Brownie Layer:

  • 1/2 cup unsalted butter, melted
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 tbsp red food coloring
  • 1 1/2 cups all-purpose flour
  • 1/4 cup unsweetened cocoa powder
  • 1/2 tsp baking powder
  • 1/4 tsp salt

For the Cheesecake Layer:

  1. 8 oz cream cheese, softened
  2. 1/4 cup granulated sugar
  3. 1 large egg
  4. 1 tsp vanilla extract

Instructions

  • Preheat oven to 350°F (175°C). Grease and line an 8×8-inch baking pan with parchment paper.
  • In a bowl, combine melted butter, sugar, eggs, vanilla extract, and food coloring. Mix until smooth.
  • Sift in flour, cocoa powder, baking powder, and salt, and stir until just combined.
  • Pour the brownie batter into the prepared pan and spread evenly.
  • For the cheesecake layer, beat together cream cheese, sugar, egg, and vanilla until smooth.
  • Spoon the cheesecake mixture over the brownie layer and swirl gently with a knife to create a marbled effect.
  • Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
  • Let cool completely, then refrigerate for at least 2 hours before slicing into bars.

Notes

  • For extra flavor, add a touch of lemon zest to the cheesecake layer.
  • Store leftovers in the refrigerator for up to 3 days.
  • To enhance the red velvet flavor, add a teaspoon of vinegar to the brownie batter.
