Description

These Red Velvet Cream Cheese Muffins are soft, moist, and bursting with the rich flavor of red velvet, paired with a creamy swirl of cream cheese. They make the perfect breakfast or snack, with a touch of decadence in every bite!

 


Ingredients

  1. 1 1/2 cups all-purpose flour
  2. 1/2 cup sugar
  3. 1 tbsp cocoa powder
  4. 1 tsp baking powder
  5. 1/2 tsp baking soda
  6. 1/4 tsp salt
  7. 1/2 cup unsalted butter, melted
  8. 1/2 cup milk
  9. 1 large egg
  10. 1 tsp vanilla extract
  11. 1 tbsp red food coloring
  12. 4 oz cream cheese, softened
  13. 2 tbsp powdered sugar
  14. 1/2 tsp vanilla extract (for cream cheese filling)

Instructions

  • Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease it.
  • In a large bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  • In a separate bowl, combine the melted butter, milk, egg, vanilla extract, and red food coloring.
  • Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix.
  • In a small bowl, beat together the cream cheese, powdered sugar, and vanilla extract until smooth.
  • Spoon a small amount of muffin batter into each muffin cup, followed by a spoonful of cream cheese filling. Then top with more muffin batter to cover the cream cheese.
  • Use a toothpick to swirl the cream cheese into the batter for a marbled effect.
  • Bake for 18-22 minutes or until a toothpick inserted into the center of a muffin comes out clean.
  • Let the muffins cool for a few minutes before serving.

Notes

  • For extra flavor, add a dash of cinnamon or nutmeg to the batter.
  • You can store these muffins in an airtight container for up to 3 days, or freeze them for up to 2 months.
  • Adjust the amount of food coloring based on how vibrant you want the muffins to be.
