- 1 1/2 cups all-purpose flour
- 1/2 cup sugar
- 1 tbsp cocoa powder
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup unsalted butter, melted
- 1/2 cup milk
- 1 large egg
- 1 tsp vanilla extract
- 1 tbsp red food coloring
- 4 oz cream cheese, softened
- 2 tbsp powdered sugar
- 1/2 tsp vanilla extract (for cream cheese filling)
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease it.
- In a large bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
- In a separate bowl, combine the melted butter, milk, egg, vanilla extract, and red food coloring.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix.
- In a small bowl, beat together the cream cheese, powdered sugar, and vanilla extract until smooth.
- Spoon a small amount of muffin batter into each muffin cup, followed by a spoonful of cream cheese filling. Then top with more muffin batter to cover the cream cheese.
- Use a toothpick to swirl the cream cheese into the batter for a marbled effect.
- Bake for 18-22 minutes or until a toothpick inserted into the center of a muffin comes out clean.
- Let the muffins cool for a few minutes before serving.
Notes
- For extra flavor, add a dash of cinnamon or nutmeg to the batter.
- You can store these muffins in an airtight container for up to 3 days, or freeze them for up to 2 months.
- Adjust the amount of food coloring based on how vibrant you want the muffins to be.
