For the Crust:

  • 2 cups chocolate cookie crumbs
  • 1/4 cup unsalted butter, melted

For the Cheesecake:

  • 3 (8 oz) packages cream cheese, softened
  • 1 cup granulated sugar
  • 1/2 cup sour cream
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1 cup chopped Reese’s Peanut Butter Cups

For the Topping:

  • 1/2 cup creamy peanut butter, melted
  • 1/2 cup chocolate ganache
  • 1/2 cup chopped Reese’s Peanut Butter Cups

Instructions

  1. Prepare the Crust: Preheat oven to 325°F (163°C). Combine chocolate cookie crumbs and melted butter in a bowl. Press the mixture into the bottom of a 9-inch springform pan. Bake for 10 minutes and let cool.
  2. Make the Cheesecake Filling: Beat cream cheese and sugar until smooth. Add sour cream, vanilla extract, and eggs one at a time, mixing until just combined. Fold in chopped Reese’s cups.
  3. Bake: Pour the filling over the crust. Place the pan on a baking sheet and bake for 50-60 minutes, or until the edges are set and the center is slightly jiggly.
  4. Cool and Chill: Turn off the oven, crack the door slightly, and let the cheesecake cool in the oven for 1 hour. Transfer to the fridge and chill for at least 4 hours or overnight.
  5. Add Toppings: Drizzle melted peanut butter and chocolate ganache over the cheesecake. Sprinkle with chopped Reese’s cups.
  6. Serve: Slice and enjoy!
